Ground Bison Protein Bites Recipe

Ingredients:

  • 1 lb ground bison (lean, high in protein)
  • 2 egg whites (for added protein without making the mixture too wet)
  • 1/2 cup nonfat cottage cheese (boosts protein without adding fat)
  • 1/4 cup ground flaxseed (fiber and protein)
  • 1/4 cup grated Parmesan cheese (adds flavor and protein)
  • 1 tbsp Goodnight’s Red River Taco Loco spice blend (use whatever flavor you think you’ll enjoy)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup finely chopped yellow onion
  • 1/4 cup chopped fresh cilantro (for a burst of fresh flavor)
  • 1 tbsp avocado oil (for greasing the tray)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Mix the Ingredients: In a large bowl, combine the ground bison, egg whites, nonfat cottage cheese, ground flaxseed, Parmesan cheese, Taco Loco spice blend, salt, pepper, chopped onion, and fresh cilantro. Mix until well combined.
  3. Prepare the Tray: You can spread out over a baking tray with parchment, or lightly grease your square muffin tray with avocado oil. In the baking tray you can use a pizza cutter to form your protein bite bars.
  4. Fill the Tray: Divide the mixture evenly among the muffin tray slots. Press down slightly to ensure they hold their shape.
  5. Bake: Place the tray in the oven and bake for 20-25 minutes or until the tops are slightly golden and check for doneness. I sometimes flip them over and finish them off another 10 minutes under the broiler.
  6. Cool and Serve: Allow the bites to cool slightly before removing them from the tray. Store leftovers in the fridge or freeze for later use.
