1-inch think beef or bison tenderloin medallion
3 Garlic Cloves
Rub olive oil on both sides of the tenderloin
Season with Red River Famous Steak Seasoning
Preheat oven to 350 degrees
Chop garlic cloves into quarters
Heat a cast iron grill pan to medium high heat.
Place tenderloin on the grill pan, cook 2-3 minutes.
Place sprigs of thyme on the grill pan around each tenderloin.
Place garlic quarters around each tenderloin.
Turn tenderloin over.
Cook another 1-2 minutes.
Remove grill pan and place in the oven.
Let cook for 5-9 minutes to a perfect medium rare
Remove grill pan from oven.
Let rest for 5 minutes.
Serve with your favorite vegetables. Asparagus goes really well with this.
