This tasty shrimp ceviche dish is quick and easy to make and will impress anyone you serve it to. Its great as an appetizer or as an entre.
¼ chopped red onion
Juice of 2 limes
1 tsp Olive Oil
¼ tsp salt
¼ tsp black pepper
1 pound cooked, peeled and chopped shrimp
1 medium tomato, diced
1 medium avocado, diced
1 deseeded jalapeno, diced
1 tbsp chopped cilantro.
Combine red onion, olive oil, salt, pepper, and lime juice and let sit for 10 minutes.
Season the shrimp with Goodnight’s Fresco Fish Seasoning
Cook the shrimp 2-3 minutes until done
Add the chopped shrimp, avocado, tomato and jalapeno and mix together.
Add salt, pepper, and hot sauce to taste.
